What’s for dinner?

I struggle with this all the time.

I'm busy.

I work two jobs basically right now and it makes it difficult to do anything.

Juggling two busy kids and a husband that puts in 12 hours at the office all day.

And because we all want to eat healthy, I'm trying to stay away from the "drive in fast food habit" that we've had from the past. So, one of my goals for this year was that I would cook more for my family.

We come home very late after basketball games and it so handy to have dinner ready. Yesterday, I made THIS and it turned out great. I wanted to share here on the blog and hopefully, you'll share what's worked for you and your busy family.

Slow-Cooked Carloina Beef Brisket

Ingredients

  • 1 (16 ounce) jar Pace Picante Sauce

  • 1/2 cup molasses

  • 1/4 cup cider vinegar

  • 2 tablespoons reduced sodium Worcestershire sauce

  • 1 large onion, sliced

  • 1 (3 pound) beef brisket

Directions

  1. Stir the picante sauce, molasses, vinegar, Worcestershire and onion in a 5-quart slow cooker. Add the beef, trimming to fit, if needed, and turn to coat.

  2. Cover and cook on Low for 8 to 9 hours or until the beef is fork-tender. This recipe may also be cooked on HIGH for 4 to 5 hours.

Below is the wonderful bread we served with it. YUM. I love me some Sourdough Bread from United!!!

No. I did NOT put Diet Coke in my crock pot. I have before. But not for this dish. But it looked so well with it's bottled friends, I snapped away.

YUM.

I cooked mine so long, 8+ hours on low, that it couldn't be sliced. We just shredded it with a fork. And the flavor was not so hot that you couldn't eat it. It was just right. I think the molasses helped. And the onions? My favorite part to scoop over the top on my sandwich. Total YUM and I will so make this again on game day.
